When life gives you milk...

...make some butter!

The Good God has recently blessed us with a few answers to some prayers regarding healthier eating at an affordable price. Within 48 hours we were presented with some wonderful chances to improve our diets and eat organically without breaking the bank. One of these opportunities is fresh milk! Our neighbors down the road, despite having 12 children, have more fresh milk than they can possibly consume.

We bought 2 gallons last night and this morning we had lots of fresh cream to skim off the top (You have to look kind of closely at this picture - there is about 2 inches of cream at the top):


Can you believe it? This is how much cream we got from one gallon of milk!

The kids enjoyed shaking the jar of cream...for awhile. Then the Kitchenaid had to give it a spin to finish it off.

After the Kitchenaid did its magic, we strained the (now) fat-free buttermilk off and will save it for tomorrow's pancakes. A little sprinkling of salt and a few turns with a spatula gave us enough butter to fill 12 mini cupcake molds! CJ wanted to put them in a cupcake shape, so we lined the pan with mini cupcake wrappers, spooned it in, patted it down and tossed them in the freezer for a quick chill down before dinner: homemade spaghetti with fresh herbs, homemade crusty Italian bread (which I started making the night before) and fresh butter.

At $3 a gallon, plus all the extras we can do with this liquid gold, how can we go wrong? Deo Gratia!
